Off Grind Gourmet- Vanilla Cinnamon Latte

As a part of our ongoing Something From Nothing series, I’d like to present to you the first post in our newest recipe category:  Off Grind Gourmet!  Today we are going to make a fancy Vanilla Cinnamon Latte, and we’re not going to spend a dime doing it.

To kick off our Off Grind Gourmet series, I’m going to share with you one of my go to latte recipes.

The Vanilla Cinnamon Latte

with optional crunchy roasted cocoa nibs



For those who prefer not to use the recipe cards:

You will need:
Ground coffee of your choice
Vanilla extract
Optional roasted cocoa nibs

Boil water
put a bit of ground coffee into a filter and put filter over whatever container you’re making the coffee in
pour the water slowly over the dry coffee grounds and let gravity do its thing. Keep pouring in more water until the drip coffee starts to look lighter in color.
(Want an Americana? Keep pouring more coffee in, letting the color continue to lighten.)
Meanwhile, in a microwavable container with a lid, pour some milk.
Add a drop or two of the vanilla extract to the milk.
Close the lid and shake well for at least thirty seconds. The milk should be very bubbly and frothy.
Put milk, uncovered, into the microwave and heat for up to a minute in 30 second intervals. Set aside.
Pour your coffee into whatever you want to drink it out of.
Spoon the milk froth gently on top of the coffee. You may also pour some of the milk in first, but be sure to use that spoon to prevent the froth from falling out. You want to spoon that on top.
Sprinkle a bit of cinnamon over the froth.
Optional: Top with a small pinch of roasted cocoa nibs

Don’t go out and get anything extra! Just use what you have in your kitchen already. Even if you only have coffee and milk, it will still be delicious.
I don’t always have all the tools I need. This specific latte was made with:
An empty Smuckers All Natural Peanut Butter Jar (for the coffee and coffee cup)
An old coffee filter cup from a coffee maker machine that doesn’t exist anymore
A mason Jar (for the milk)
A pan of water (the tea kettle was cracked)

P.S.  I know that roasted cocoa nibs aren’t usually in everyone’s pantry, but believe me- they are a staple in mine!  We use them in everything from our lattes to our cookies.  They get sprinkled over oatmeal and we spoon them into scones.  You name it- we’ve put em on!  They’re not sweet… they are more like baker’s chocolate.  You can easily substitute a few shavings of baker’s chocolate for these puppies if you want to.
