Recipe: Chicken Taco Pizza

This chicken taco pizza is adapted from a basic recipe I’d found online.  I’ve changed things so much, in fact, that it’s truly taken on a life of it’s own!  It’s savory, spicy, simple as ever to make and tastes amazing.  You can make your own pizza dough if you please, but we just use the Pillsbury pizza dough which is how this recipe is written.  Print out the recipe card as needed, of course, and I hope that you enjoy this pizza as much as we do!

Chicken Taco Pizza
A taco pizza that's easy to make, delicious to eat and easy to adapt. Use whatever meat you wish, or keep it meat free! It's crunchy, melty and oh so very spicy. Yum!

Ingredients
  1. Pizza Dough (We use Pillsbury.)
  2. 2 chicken breasts (or whatever meat you're using.)
  3. White onion, chopped (approx 1/4 of a large white onion)
  4. Refried beans
  5. Salsa of your choice
  6. Ghost Pepper Salsa of your choice
  7. Lime juice
  8. Taco Seasoning (We use Salt Free Mrs. Dash)
  9. Cooking oil
  10. Mozzarella cheese, shredded
  11. Mexican four cheese, shredded
  12. Corn chips
  13. Spring mix salad
  14. Sour cream
  15. Scallions
Instructions
  1. Preheat at 400 degrees.
Lay out your pizza crust and prep as packaging indicates. Prebake the crust as packaging indicates. Meanwhile
  1. With a bit of oil in your pan, cook chicken and some of the chopped onion until the chicken is cooked through. Shred or finely chop your chicken and set aside. Drain your pan of oil.
  2. Put chicken, all of the chopped onion (both the bits you put in when the chicken was cooking and the remaining raw chopped onion) back into the pan and add the taco seasoning to taste.
  3. Add the regular salsa. How much to add is a visual- start low and mix the mixture together. When you have added enough salsa, the chicken will no longer look dry. This is basically a thick sauce for your pizza. If you like it extra saucy, just add more salsa.
  4. Add the Ghost Pepper salsa to taste.
  5. Add a few dashes of lime juice to taste.
  6. Cook your mixture on low heat until it's bubbly. That pizza crust should be out and ready by now!
  7. On your prebaked crust, spread an even layer of refried beans.
  8. Add the sauce mixture just like you would for pizza sauce and spread evenly atop the beans. Top with Mozzarella and Mexican Four cheese.
  9. Bake for about 8 minutes, and pull it back out of the oven.
  10. Add crumbled corn chips, spring salad and more mexican four cheese on top. Bake for 3 minutes, or until crust is a healthy, golden brown.
  11. Serve with any remaining salsa you have, sour cream, scallions and remaining corn chips on the side.
Notes
  1. Making this pizza a vegetarian option is very simple. Just skip the meat and add all other requested items with the salsa, heating on low.
