Recipe: Grilled Apple on Flatbread

Grilled apple and cheddar flatbread sandwiches?  Don’t mind if I do!  I tried a new idea in the kitchen tonight, and it came out absolutely fabulous!  Here’s what you’ll need to make this bit  of tasty, and as always, the “cardless” instructions are at the bottom of the post, under the nifty recipe card.

A simple and delicious Vegetarian option for dinner.

Ingredients
  1. 1 Green Apple
  2. 1 Small Shallot
  3. Mild White Cheddar Cheese, shredded.
  4. Brown Mustard
  5. Olive Oil
  6. 2 Large Pieces of Flatbread
Prep
  1. Peel, core and thinly slice your apple. Peel and finely chop your small shallot. Quarter your flatbread. You'll get two sandwiches out of each piece of flatbread.
  2. Brush olive oil on one side of each piece of flatbread, and smear mustard on the other side. Sprinkle the mustard side with the shallots. Nestle in the thinly sliced apple and top with finely shredded White Cheddar. Top with the other piece of flatbread and brush more olive oil onto the top. Prep all eight sandwiches this way, stacking on your plate.
Cook
  1. Heat a skillet with a bit of olive oil in the pan to a low to medium heat and grill until brown on each side. Serve while still hot.
Notes
  1. Great as a main dish, side or snack
  2. Healthy alternative

They are great as a snack or a meal, depending on how hungry you are!  I can’t wait to make these again.
