Recipe: Thai Chicken over Rice

Are you looking for a good Thai Chicken and Rice dish?  Well,  here’s a new favorite, tested today for lunch  This thai chicken dish has made it to the top of our list of craveable foods.  Unreal amounts of tasty.  The written instructions under the recipe card for those who prefer it.

Simple, tasty and better than many thai delivery places, this dish is a new staple for us!

Ingredients
  1. Chicken breasts. Or turkey legs. Or little game hens. Whatev.
  2. Fresh green beans
  3. Sea salt
  4. Thai Curry Rub (from Pampered Chef), or whatever "all included" spice you wish.
  5. Olive oil
  6. Rice
Instructions
  1. Preheat your oven to 350 degrees.
  2. Pour a thin layer of olive oil into the bottom of your roasting pan/casserole dish/whatever you're baking this in. Just enough to cover the bottom will do just fine.
  3. Sprinkle a thin layer of your seasoning on top of the olive oil.
  4. Lay your thawed poultry of choice in.
  5. Snapping the ends off and then snapping in half, add the fresh green beans around your poultry.
  6. Sprinkle everything liberally with your seasoning of choice.
  7. Add a bit of ground sea salt to finish it off.
  8. Bake for 30-35 minutes- however long you need to make sure your poultry is properly cooked. The green beans should looked a bit shriveled.
Notes
  1. Something magical happens to those green beans when baked in this dish.
  2. Easy to adjust depending on how many servings you require.

When you’re bake is in the oven, go and make some rice.   Any rice, any way you want it is just fine.  We use Japanese sushi grade rice, and do it on the stove top.  Simple, clean and tasty.
 
Dish out the rice into bowls, and nestle your poultry pieces on top.  Pile on some of those tasty green beans around to the edges of the bowl and dig in.
